Lot 2: Finca Xoxohuico Gilberto Manzano Cabrera
“Xoxohuico” comes from the Náhuatl language and can be interpreted as “The Green Place.” It's the name of the one-hectare farm managed by Gilberto Manzano Cabrera, a 28-year-old coffee producer from Veracruz who represents a new generation of farmers deeply rooted in tradition and family values.
Gilberto's journey into coffee began thanks to the guidance of his mother, who is also a coffee producer and taught him the importance of caring for the land. Her mentorship inspired him to establish his own plot, and today, the entire family is involved in the cultivation—from fertilization to pruning and composting.
At Finca Xoxohuico, Gilberto grows Marsellesa and Garnica varieties under sustainable practices. His coffee is selectively handpicked and processed with great care using a washed method. The process includes a two-day fermentation in cherry, followed by depulping and an extended 96-hour second fermentation, resulting in clean, complex cups with high potential for specialty markets.
Gilberto mostly sells his coffee in parchment but is increasingly focused on producing specialty-grade lots. His vision is to build a sustainable legacy, creating economic opportunities in his region and inspiring his young son to one day follow in his footsteps as a producer.
Finca Xoxohuico is a promising example of small-scale, high-potential coffee farming driven by family, tradition, and a commitment to quality.
