High in the Sierra de Zongolica in Veracruz, Finca del Alba rises as a new expression of tradition and ecological commitment. Founded by Edzon Meza, the farm is guided by the wisdom of generations past and a clear vision for the future: to grow coffee with integrity, care, and deep respect for nature.

Though still young — just two years into production — Finca del Alba has quickly become a symbol of community-led, sustainable farming. Local men and women form the heart of the team. They are trained to care not only for each coffee plant but also for the biodiversity that surrounds them. This work is done with purpose, creating a space where knowledge is shared, and each hand involved in the harvest is part of something greater.

At Finca del Alba, everything begins with healthy soil. Only organic inputs are used — bioles and composts made on-site nourish the land naturally. Harvesting is done by hand, with only ripe cherries selected. These are floated to remove defects, then dried slowly on raised beds inside a solar dryer. The result is a clean, expressive cup that honors both the terroir and the process behind it. Once dry, the coffee is stored in Ecotac bags and kept under careful conditions to preserve quality.

Finca del Alba is not just a farm — it’s a learning journey. Edzon approaches each harvest as an opportunity to grow, refining every stage of production with curiosity and discipline. In collaboration with Tlapajti, a project by Ensambles Cafés Mexicanos, the farm is part of a broader movement to elevate the region’s coffee through education, sustainability, and community building.

“I started with little experience in specialty coffee,” Edzon says, “but a great desire to learn. Each season has taught me more about how to bring out the best in our land.”

Finca del Alba stands for more than just quality — it represents a way of life that values care, tradition, and balance with nature. Every cup carries the story of a community working together, and a farmer’s dream taking shape, one harvest at a time.
