Lot 16: El Centro Alessia Mena
Located in the volcanic soils of the highlands of the West
Valley Region – Finca Sumava de Lourdes microclimatic
conditions present the characteristics of a unique terroir for the
production of boutique coffees, definitely a blessed spot.
Finca Sumava, has both Atlantic and Pacific Ocean influence, with
very low temperatures at night with misty and chilly mornings, it
warms up during the day.
During the day, temperatures may rise to 24-25 degrees Celsius,
with rain showers between May and November. Soil structure is
volcanic and with deep penetration and well drained soils.
The ripening season is late, having the main reaping season in
February and March, which is the most established dry and sunny
season, enabling fully ripen cherries.
El Centro: Located @ 1650 masl – 1670 masl, this farm is
part of Sumava de Lourdes located on the sunset area of the farm.
Planted with Caturra varietal, we developed this natural process
from center of harvest and carefully drying the full cherries
bringing dark fruit and sweet winey taste to the cup. With chilly
nights and cool days during summer at our farm, the cherries reduce
their moisture content in a period of 40 to 40 days, slowly and
carefully.
