El Burío Farm is located in San Francisco de León
Cortés and was acquired by our family in 2014. Situated at
an elevation of 1,900 meters above sea level, it is cultivated
under shade. In addition to this, we care for the farm year-round,
providing the right nutrition and managing it in harmony with the
environment. These efforts, combined with ideal weather conditions
and harvesting at the optimal stage of ripeness, have proven
perfect for cultivating the Kenya variety.
This variety is the result of experimenting with different
cultivars, and Kenya produced the best results on this farm.
Harvested in February, the cherries benefit from the sun-drenched
hills and dry-season winds that blow across our land.
This year, we experimented with a new method: fermenting the
coffee in barrels with its full mucilage for five days before
drying it on African beds. This delicate process allows the coffee
to develop exceptional qualities, making this bean a true
reflection of the passion and dedication we put into our work every
single day.
