How We Cultivate Our Passion:
Our pursuit of excellence leads us to Finca Don Joaquín, a
land entrusted to us over five
years ago by our beloved uncles, Joaquín Quirós and
María De Los Ángeles Chacón
Zúñiga. This farm in Canet de Tarrazú is
where our belief takes shape, thanks to a deep
family commitment and the blessings of nature:
Ideal Elevation and Climate:
Our coffee is grown between 1,950 and 2,050 meters above sea
level. This altitude, along
with cool and stable temperatures (17–23°C), is no
coincidence—it slows down the fruit’s
maturation, allowing sugars to concentrate and develop a flavor
complexity that is
unparalleled in the cup.
Climatic Harmony:
With a well-defined rainy season (May–November) and a
precise dry season
(December–April), nature guides our process. This fosters
uniform flowering and, crucially,
ensures even ripening and drying of the cherries, naturally
enhancing their organoleptic
qualities.
Soils with History:
The volcanic and sedimentary soils of Don Joaquín, rich in
minerals and offering excellent
drainage, are the foundation of our profiles. They contribute to
elegant aromatic
characteristics, bright acidity, and a distinctive body in our
coffees.
Mindful Shade-Grown Practices:
We grow our coffee under the protection of trees—a practice
that honors natural balance.
Shade cultivation improves the microclimate, preserves moisture,
and protects the soil.
Every step, from planting to harvest, receives personal and
meticulous care from our family,
ensuring that each bean reaches its full potential.
Diversity and Dedication:
We don’t settle for the ordinary. At Don Joaquín, we
grow a diverse collection of varieties,
including Panamanian Geisha, Millennium, Red Bourbon, Kenya SL28,
Ecxelencia, and
many others. This continuous innovation, combined with the active
involvement of each
family member, allows us to offer dense, high-quality beans
classified as SHB (Strictly Hard
Bean).
