The Sítio Santa Terezinha is located in the municipality
of Carmo de Minas, within the microregion known as Mantiqueira de
Minas – Denomination of Origin (DO), where coffees are
renowned for their complexity and distinctive sensory profile. The
farm is part of the family group known as “Sítio da
Torre” in Carmo de Minas.
The continuous pursuit of excellence in coffee quality is a top
priority at the farm. Producing specialty coffee requires great
dedication and effort, but we are confident that we are on the
right path.
The harvest is carried out manually, selecting only ripe cherries.
The cherries are then washed, pulped, spread in thin layers on
patios, and turned several times a day until they reach the ideal
moisture content for resting in wooden boxes. During rainy periods,
the coffee is moved to mechanical dryers.
Environmental preservation is one of the farm’s main
commitments, as we believe that this harmony between people and
nature makes us stronger and better with each harvest.
