Under the stewardship of Jesús Carlos Cadena Valdivia, a fifth-generation coffee producer, Finca Pocitos has evolved into a beacon of innovation and quality. Carlos's journey into specialty coffee began in 2012 with Finca Huehuetepan, achieving a sixth-place finish in the Cup of Excellence. Building on this success, he established Finca Pocitos in 2015, planting varieties such as Typica, Geisha, Pacamara, and Mundo Maya, and implementing modern processing techniques to enhance cup profiles.
The farm employs meticulous post-harvest processes, including
anaerobic fermentations lasting up to 300 hours and drying on
African beds for 20–30 days. These methods have yielded
coffees with vibrant notes of raspberry, vanilla, and chocolate
liqueur, reflecting the farm's dedication to excellence.
Finca Pocitos's commitment to quality has been recognized in
multiple Cup of Excellence competitions, securing third place in
2023 and first place in the experimental category in 2024 with a
Geisha variety scoring 90.66 points.
Beyond accolades, Carlos emphasizes sustainability and continuous learning, adapting cultivation practices to the unique terroir of Cosautlán de Carvajal and exporting to markets in China, Canada, Germany, Japan, and the USA.
