From the mountains of Dipilto, in the heart of Nueva Segovia, I
have dedicated my life to perfecting a coffee that represents not
only quality, but also history, discipline, and a family legacy. My
name is Abner Samuel Zavala. I am a third-generation specialty
coffee producer, and since taking over Finca El Cambalache in 2016,
my purpose has been to continue the path that my father, Salatiel
Zavala, built with hard work and passion. Every bean we produce
carries behind it years of experience in the "Cup of Excellence"
and the commitment to keeping Nicaragua among the best coffees in
the world.
At Finca El Cambalache, we leave nothing to chance. Our winning
lot was cultivated at 1,500 meters above sea level using a
"Controlled Double Fermentation" process, where every single detail
was rigorously monitored: manual selection of ripe cherries,
prolonged fermentations under controlled temperatures, and a drying
process fully developed on the farm. We work without agrochemicals
and under strict hygiene standards because we believe that
excellence is born from respect for the land and absolute care for
the coffee. This combination of terroir, knowledge, and passion is
what transforms our cup into a unique and unforgettable
experience.
Participating in the "Cup of Excellence" has been much more than a
competition; it has been an opportunity to show the world what
Nicaragua has to offer. Thanks to this recognition, our coffee has
reached markets such as Korea, Thailand, and China, carrying with
it the name of our community and our country. What makes our coffee
unique is not just the process or the quality, but the faith and
passion that my family pours into every single stage—and the
best way to describe it is "Unstoppable." That is why, when someone
tastes our coffee, they are not just buying a specialty beverage:
they are supporting a story of perseverance, tradition, and
excellence that continues to grow, generation after generation.
