Waldemar Ferreira de Paula Neto is a fourth-generation coffee
producer. When he bought this property, there were a lot of weather
problems and he almost got discouraged. We have partners who truly
do justice to their role of producing specialty coffees. It would
not be possible if everyone did not have the same interest.
Women are always exclusively hired to selectively pick the coffee
cherries as they are very efficient.
Processing is always varied, some natural, some pulped natural.
Collaborators between the ages of 20 and 50 help with
processing.
In processing this lot, Waldemar and his partner, who is
responsible for processing, exchanged ideas and he convinced
Waldemar to process the coffee as pulped natural. They left if in
the tank for 36 hours with a little water, just enough to cover the
coffee. When processing was done, Waldemar sent the lot to be
cupped and was enormously satisfied when he tasted it.
They are very concerned with quality standards, as all the effort
of the entire year is there, and it can be lost due to something
small.
