This is the place where our family learned that producing an exceptional coffee begins long before the harvest—it begins with a deep respect for the land.
My name is Miguel Castelán Valdés, and together with my family, we have dedicated the past twelve years to transforming our way of farming. We decided to leave the conventional model behind to embark on a more demanding path: that of specialty coffee. It has been a process of constant learning, of trial and error, of heavy investment, immense patience, and a profound conviction that Mexico can offer coffees capable of competing among the absolute best in the world.
This Geisha Honey lot represents that quest. Every single cherry was meticulously hand-picked only at its peak point of optimal ripeness. The entire process was executed with the utmost care to preserve the natural sweetness of the fruit, highlight its elegance, and allow the distinct character of our terroir to express itself with total clarity. Nothing was left to chance; every decision was made with a single objective: to reveal the highest potential of this coffee.
Yet, the true value of this lot does not lie solely in its variety or its process. It lies within the people who made it possible.
