This is a brief history of the constitution and vision of the company Sociedad Comercializadora Alfaro Diaz Nuila, S.A. de C.V. (ALFACOMER, S.A. de C.V.).
Constituted in august 2019 with the vision to put in practice all the knowledge of the international specialty coffee market, market tendencies and over 35 years of experience in coffee growing, processing and commercialization of its Legal Representative Fernando Felipe Alfaro Castaneda.
ALFACOMER is a company registered as producer and exporter in the Salvadorean Coffee Council. Authorized to operate either way.
In 2019, ALFACOMER acquires from the father in law of the Legal Representative, Dr. Napoleón Diaz Nuila, Finca Miramar located in the San Salvador Volcano at an average altitude of 1,700 meters with the goal of establishing a productive farm with exotic varieties and potential for competing and participating in the Cup of Excellence Events held in El Salvador. The farm was planted with the traditional Arabigo and Bourbon varieties and is in the process of complete renovation.
Finca Miramar has an area of 22 manzanas (15.5 hectares) located in a mountain valley in the San Salvador Volcano skirts. Its rich volcanic soil helps produce an extra ordinary quality in its coffee. The old plantation has been pruned hard with a complete renovation program of exotic varieties such as Geisha, Kenya SL 28, Pacamara, Pink Bourbon and Red Bourbon.
This crop the coffee from Miramar farm has been mostly fully washed and processed at El Carmen Mill. Coffee is dried on clay patios for 15 days and then left to rest in the warehouse for 30 days before dry milling. We started doing some Anaerobic natural fermentation process experiments at the farm and drying such cherries in African beds for over 30 days after an 192 hour anaerobic fermentation process.
