The journey of our specialty coffee begins with a deep commitment to agronomic health. Finca Puente Nuevo, which operated as a cattle ranch in the past, underwent a brilliant agricultural transformation in 2022 when it was successfully replanted as a dedicated coffee estate. Nestled along the banks of the Pixquiac River, our land is continually nourished by the cold, crystal-clear water flowing directly from the Cofre de Perote volcano. This powerful geographic feature creates a unique cold and humid microclimate. The low ambient temperatures slow down the development of the coffee cherries, leading to a late, prolonged ripening period that allows the sugars and organic acids within the fruit to concentrate beautifully, resulting in extraordinary complexity in the cup.

At Finca Puente Nuevo, we believe that an exceptional cup requires a healthy, flawlessly managed tree. We implement a rigorous nutrition program, fertilizing four times per year to ensure optimal plant vitality. The harvest is strictly executed through selective hand-picking, gathering the cherries only at their peak point of optimal sugar maturity. To maintain absolute freshness, the coffee is depulped on the exact same day it is harvested. It then undergoes a traditional 48-hour fermentation process, a precise timeline that allows the wild yeasts to naturally break down and detach the mucilage layer from the parchment (la almendra).

Once the fermentation target is reached, the coffee is thoroughly washed using pure, natural spring water. The drying phase is handled with extreme patience: the parchment is spread across patios to dry under the sun for 15 days, receiving a mandatory rest and stabilization period indoors each night to protect the green coffee from ambient moisture shocks. Securing a place on the international stage is a powerful validation of our transition from ranching to elite coffee farming. It proves that when multi-generational respect for the land is paired with strict processing protocols, the unique terroir of the Pixquiac River can produce world-class specialty coffee capable of captivating the most discerning palates across the globe.
