Finca El Deseo is located at 1,400 meters above sea level in La
Laguna, Zongolica, Veracruz, this intimate two-hectare farm
represents three decades of unbroken family dedication. For 30
years, coffee has been the economic foundation of the family.
Today, that legacy is actively managed by the next generation, who
have taken the inherited knowledge and elevated the farm's
agricultural practices to compete in the demanding specialty coffee
market. They have transformed a traditional family crop into a
meticulously controlled operation.
This exclusive micro-lot consists of 100% Sarchimor, harvested
during the narrow February to March window. To unlock and maximize
the complex cup potential of this specific variety, the family
implemented a rigorous "Experimental Washed" protocol. The process
begins with a strictly selective harvest of optimally ripe
cherries, immediately followed by density flotation and thorough
sanitization to establish a clean microbial environment.
The core of this lot's unique profile lies in its controlled
anaerobic fermentation phase. By isolating the cherries from
oxygen, the producers deliberately manipulate the sensory
development before proceeding with the washing phase. Finally, the
coffee is dried and stabilized, then secured in hermetic liners
within traditional jute sacks and kept in a strictly
moisture-controlled warehouse. This lot is a testament to how
generational resilience, combined with precise experimental
processing, can redefine the potential of Zongolica coffee.
