The coffee was harvested by hand and wet processed a maximum of two days after picking. The wet method consists of passing the coffee through a washer to separate floaters, then going directly to the huller with green cherry separator. Next it was taken to a covered, concrete patio for drying. Drying was done with frequent passes of tools to turn over, avoiding prolonged contact of the lower layer with the moisture initially deposited on the patio.
Concern for quality begins with the strategy to delay the harvest and guidance from the harvest team to avoid picking unripe cherries. Washing during wet processing and care on the patio were priorities demanding the dedication of all involved.
