After returning to his hometown following Typhoon Morakot in 2009, he began transitioning his tea farm into a coffee estate, focusing on varieties such as SL34 and Geisha.
Yeh applies precise fertilization based on seasonal growth cycles and harvests cherries late in the season for higher density and flavor complexity. Drawing from tea-processing expertise, he developed a unique post-harvest method: low-temperature fermentation at 15°C for 3–4 days, followed by controlled drying to ensure consistency despite Alishan’s humid climate.
With temperature- and humidity-controlled storage and tailored drying curves for each processing method, Ching Ye Coffee Estate combines traditional farming with modern precision to produce consistently high-quality coffees that have won national acclaim in Taiwan’s specialty coffee competitions.
